Kachumber Salad

Hi Bulls!

This week if you visit the World Flavors station at Juniper Dining Hall, you’ll find a few traditional Indian food items. The flavorful featured options include chicken tikka masala, potato curry, naan bread, and lemon-ginger basmati rice. The spiciest and most colorful menu item is definitely the Kachumber salad (broken into 3 syllables pronounced “ka”- as in commute, “chum”- as in chums or friends, and “ber” as in burr it’s cold!).  

This slightly sweet and salty vegan salad packs a powerful nutritious punch! The base consists of cucumbers, tomatoes, and red onions. These veggies have lots of vitamins and minerals, as well as other phytochemicals like lycopene (from the tomatoes) which is a powerful antioxidant! While this salad is a staple in many countries around the world, the recipe at Juniper Dining has a couple extra surprises. The slightly sweet flavor comes from the mango in Major Gray Chutney, while the spicy kick comes from the jalapenos. A little lime juice and salt really highlight and compliment the sweetness from the chutney and red onion. This salad is great as a small garnish or as a full side.
